Dylan Walenciak leads Isola with a passion for Italian culinary tradition and a drive to push it forward. As both Executive Chef and General Manager, he oversees every aspect of the guest experience — from the menu to the moment you walk through the door.
His cooking is rooted in the belief that the best Italian food is honest, ingredient-driven, and always evolving. At Isola, that philosophy shows up in every bowl of pasta and every wood-fired pie.
